Maple Butter

Maple butter is one of the most popular maple syrup product. It can also be sold as maple spread, maple fondant or soft maple sugar. Despite the name, maple butter does not contain any butter or dairy product. It is made solely from maply syrup. The equipment to make it have evolved over the years but the technique has stayed pretty much the same. First, the maple syrup is boiled to 112oC. Then it is cooled down to around 90oC and churred into its typical color and legendary creamy texture. To facilitate the churring process, some clever people develop a specific machine that will pump the butter up and down in a reservoir, adding oxygen and cooling it down further. After about 10 minutes, the precious maple butter is ready!

Use of Maple Butter

Maple butter has multiple use in cuisine. The most basic and popular ones are as a spread on toast, pancakes, waffles, croissant and other pastries. Warmed up, it makes a great addition to your ice cream. It also makes great icing on a vanilla cake. Its use in cuisine is however underestimated. It can be used in a pesto, a mayonnaise, added to sauces and even level up a bowl of pastas! Your creativity is your only limit with this unique product.

A confession I have to make is that my favorite use of it is to eat a spoon right off the jar after my morning toast. Guilty pleasure!
